My ambition
As you get a little older you find it hard to give people a list of things that you would like for a gift, as most of us have all the possessions we need. One thing I would like to do very soon is to take a proper Cordon Bleu cookery course. This is a long-standing ambition as I intended to train in Restaurant Management when I was younger but it never happened. I have seen an excellent course at the Western Culinary Institute near Portland, Oregon in the Pacific Northwest of the States. Their website at http://www.wci.edu/ has some excellent courses in culinary arts as well as patisserie and baking. The real clincher about this school is the location – this area has been called the Burgundy of America. The countryside is rich in produce and the waters are abundant with seafood. The forests and hills overflow every autumn with gourmet mushrooms and edible berries that just beg to be incorporated into your cooking. If I can raise enough I would love to do a course next September.
